Tom Kha Yummmmmmmm
I’ve got the sniffles and am trying to ward of bronchitis, which is what my sniffles have morphed into the last two go-rounds. I IM’d my amazing-truly-don’t-deserve-him husband yesterday afternoon in a slightly pathetic state and asked if he’d want to make me some Tom Kha soup for dinner. He said yes! That’s the amazing thing about marriage– you find a person who is willing to do nice things for you for no good reason, AND THEY KEEP DOING THEM for the rest of your life.
Anyway, it helps that Dave loves Tom Kka himself, and also that he had recently perfected the recipe. We’ve tried off and on with recipes of varying levels of authenticity. I had basically settled for this tasty, but slightly soul-less version from Eating Well, but then Dave found a nice legit version on Tigers & Strawberries, where Barbara really knows her Thai food. We can get all the ingredients here in SD, and last night we did.
Dave cooked a pot of jasmine rice and served the soup, with chicken and shrimp, over the rice. Heaven!
